Ian Jones

Area General Manager

Hailing from small town Aurora, Ontario, I started my hotel career at the Toronto Sheraton Centre as the last official “Key Filer”. Back in those days hotels used hard keys, and I was the last of a long line of key filers who returned the keys back into their slots … what a legacy.

Over the last 40 years, I’ve been fortunate enough to travel the world with my family and have opened five hotels and rebranded three others in 7 different countries, across 4 continents, but Calgary is now home and leading the amazing team at the Dorian Hotel is my passion.

As a board member of the Alberta Hotel & Lodging Association, I am proud to lead the hospitality charge across our great province.

Rohan Chavan

With over 16 years of cross-continental experience spanning Miami, Germany, India, Dubai, and Canada, Rohan Chavan brings a rare global perspective shaped by leadership roles across luxury Hyatt and Marriott properties. His expertise spans hospitality finance, compliance, and most importantly the art of service.

Beyond the dashboards, Rohan is an avid polo enthusiast, a peak dweller at heart, and a self-proclaimed connoisseur of dumplings, fueled almost entirely by a serious addiction to coffee!

Tracy Sorathia

Area Director of Human Resources

I began my hospitality career at the Chateau Airport—formerly CP Hotels & Resorts and later rebranded as the Delta Calgary Airport Hotel. Over the years, I advanced through a variety of operational roles, including Front Desk, Night Audit, Payroll, and Accounting, before discovering my true passion in Human Resources.

My HR experience spans several amazing hotel brands, including Delta, Westin, Residence Inn, as well as an independent hotel in downtown Calgary. I’ve also broadened my expertise through corporate HR roles in the energy sector, allowing me to develop a well-rounded perspective on people and organizational development.

I’m beyond proud to be part of the team at the Dorian Autograph & Courtyard, along with the new Element by Westin. In my role as Area Director, I am deeply committed to fostering people-first cultures and driving organizational excellence through strategic and compassionate HR leadership.

Outside of work, I’m a published author and an amateur photographer (landscapes are my favorite). I also enjoy spending quality time with my family, through activities like camping, hiking, and cross-country skiing.

Hospitality isn’t just what I do, it’s who I am.

During my free time, I prioritize quality moments with my family, making the most of every opportunity to connect and recharge. I stay active through basketball, which helps me manage stress while fueling my competitive spirit and reinforcing the discipline and consistency I bring to my work. I also have a deep love for freediving. Being in the ocean brings me a sense of peace, clarity, and balance. It’s where I disconnect, refocus, and return grounded and inspired."

Leroy Borrega

Executive Chef

Chef Leroy Borrega’s love for cooking sparked at just seven years old, when he began crafting simple meals for his little sister. That early spark became a relentless passion, one that led him to earn a Culinary Arts degree from Lyceum of the Philippines University.

He started his professional culinary journey with The Ritz Carlton Bachelor Gulch and went to the high-energy kitchens of China, Hong Kong, Singapore and Australia, he has sharpened his craft alongside Michelin-starred chefs and culinary icons from the World’s 50 Best restaurants.

He helped elevate his previous restaurant into Canada’s Top 100 and played a key role in earning Best Restaurant in Calgary by Avenue Magazine for three consecutive years. Most recently, he was known for doing Hapunan, Calgary’s first Filipino Omakase experience, and now he brings ORAS a bold Filipino tasting experience at Wilde on 27.

Chef Leroy’s mission is clear: to put The Dorian on the world culinary stage.
